Assistant Restaurant Manager | Byron
Three Blue Ducks is seeking an experienced and passionate individual to join our team in Byron Bay.
Set on an 80-acre working farm at The Farm Byron Bay, Three Blue Ducks is a destination focused on quality food, genuine hospitality, and a connection to the land. Our Byron venue is an iconic location, known for its seasonal produce, beautiful surroundings, and farm-to-table approach. The Role
This is a hands-on leadership position for someone who understands hospitality, thrives in busy settings, and recognises that successful venues are built on strong teams, effective systems, and a dedication to the guest experience. You will work closely with our owners, leadership team, and venue management team to drive the overall success of the Byron operation, encompassing daily service, team culture, financial performance, events, and future growth.
A minimum of three days per week will be spent on the floor, actively leading in the restaurant, setting service standards, supporting the team, and ensuring consistent delivery of our values. The remainder of the week will be based at our Byron Head Office, collaborating with the leadership team on strategy, operations, people management, and venue growth opportunities.
What you’ll be doing:
- Leading the overall operations and performance of the Byron venue.
- Being a visible and hands-on leader during service, setting the standard for hospitality and team culture.
- Supporting and developing the management team and wider venue team.
- Driving financial performance through effective cost control, labour management, and operational planning.
- Managing key venue KPIs including COGS, labour, revenue, and operational expenses.
- Developing strategies to grow revenue, improve efficiency, and attract new business.
- Overseeing recruitment, onboarding, training, and ongoing team development.
- Creating a positive, accountable, and high-performing team culture.
- Managing rostering, purchasing, inventory, and operational systems.
- Working closely with kitchen, events, and support teams to ensure seamless operations.
- Identifying opportunities for improvement and implementing solutions that enhance guest experience.
- Maintaining the quality, consistency, and values that define Three Blue Ducks.
About you:
- Proven experience as a General Manager, Venue Manager, or senior hospitality leader within a high-volume restaurant environment.
- Strong financial understanding with experience managing budgets, forecasting, and venue profitability.
- A confident leader who can inspire, develop, and support a large team.
- Passionate about creating exceptional guest experiences.
- A hands-on operator who enjoys being part of service and leading from the floor.
- Strong food and beverage knowledge, with an appreciation for seasonal produce, wine, and hospitality.
- Experienced with hospitality systems including rostering, POS, payroll, and reservations platforms.
- Calm, organised, and solutions-focused under pressure.
- A natural communicator who builds strong relationships across teams.
- Someone who brings energy, humility, and a good sense of humour to the workplace.

Salary: $76,000 – $82,000 per year Work type: full-time Location: Byron Bay (onsite)
