Chef De Cuisine - RACV Inverloch Resort

RACV is seeking an experienced and talented Chef de Cuisine to lead kitchen operations at RACV Inverloch Resort. This role offers a hands-on leadership opportunity for a passionate chef to mentor a team, drive culinary excellence, and create memorable dining experiences in a regional location.

About the Role

Reporting to the Head Chef, you will be responsible for the day-to-day leadership and management of a busy kitchen. Your duties will include ensuring high standards of food quality, consistency, and service.

Key responsibilities include:

  • Leading, coaching, and developing a team of chefs and kitchen staff.
  • Delivering exceptional food experiences across restaurant, events, and functions.
  • Managing food costs, stock control, and kitchen operations.
  • Supporting menu development and culinary innovation.
  • Ensuring compliance with food safety, hygiene, and workplace safety regulations.
  • Driving a positive, high-performing, and collaborative team culture.
  • Contributing to the overall success of the resort's food and beverage offering.

About You

We are looking for a passionate culinary leader with strong technical skills and a genuine interest in developing people.

Requirements include:

  • Trade qualified Chef with Certificate III in Commercial Cookery or equivalent.
  • Experience leading teams within a commercial kitchen environment.
  • Demonstrated experience across multiple kitchen sections within a 4 or 5-star hotel, resort, or premium hospitality venue.
  • Strong food preparation, stock management, and cost control experience.
  • Experience training and developing kitchen team members.
  • Excellent communication and leadership skills.
  • A hands-on approach with the ability to remain calm under pressure.
  • Food Handling Certificate and strong knowledge of food safety requirements.
