Azabu Group is seeking a Chef to join Garaku, a Two-Hat kitchen situated within the Prefecture 48 precinct. The Opportunity Reporting to Head Chef Derek Kim (formerly Head Chef at Tetsuya’s), you will work in a sophisticated, intimate Chef’s table setting where guest visibility is integral. Azabu Hospitality Group is committed to staff development, offering an environment to accelerate growth through internal training and mentorship.
In this role, you will:
- Refine your craft and modern techniques under the guidance of awarded culinary leaders with world-class fine dining backgrounds.
- Participate in structured internal training focused on developing technical skills, palate, and operational knowledge.
- Gain exposure to contemporary Kaiseki principles, intricate knife skills, and the artistry of seasonal food presentation.
- Learn to maintain the meticulous standards, pacing, and presence required for a high-end, open-kitchen dining experience.
What We're Looking For
- A Chef with a minimum of 2 years’ experience in a premium or fine dining restaurant environment.
- A strong desire to embrace a new challenge and actively develop skills through internal training programs.
- A commitment to the discipline, structure, and precision required for premium Japanese culinary presentation.
- A passion for genuine hospitality and the focus needed to thrive in a guest-facing, intimate kitchen environment.
- Excellent time management, strict adherence to NSW food safety and hygiene regulations, and a collaborative team mindset.
