Lancemore Lindenderry Red Hill is seeking an experienced and passionate Food & Beverage Manager. This role offers an opportunity to lead one of the Mornington Peninsula’s recognised boutique hotel dining and events operations. It is a chance for a strong operational leader to oversee a diverse F&B offering, including conferencing, weddings, events, restaurant dining, cellar door experiences, and in-room guest service. The position will also contribute to shaping the hotel’s future growth and guest experience.
About the Role
Reporting to the General Manager, this position is responsible for all Food & Beverage operations at the property. The focus is on ensuring exceptional guest experiences, strong commercial performance, and fostering a positive, high-performing team culture.
The role's oversight includes:
- Conferencing & Events
- Weddings
- Restaurant & Bar operations
- Cellar Door experiences
- In-room dining and hotel guest service delivery
This is a hands-on leadership role that requires significant operational capability, commercial understanding, and the ability to manage large service periods. It also involves consistently driving standards, culture, and profitability.
Key Responsibilities
- Leading and developing a high-performing F&B team across various outlets and service styles.
- Driving revenue growth and operational profitability.
- Managing labour costs, payroll, and roster efficiency.
- Delivering exceptional weddings, conferencing, and events experiences.
- Collaborating with the Executive Chef and hotel leadership team to enhance the overall guest experience.
- Cultivating strong team engagement, accountability, and service culture.
- Maintaining exceptional presentation and operational standards across all guest-facing areas.
- Supporting strategic planning and continuous improvement initiatives across the business.
About You

- Previous experience leading a large-scale or boutique hotel F&B operation.
- Strong knowledge of restaurant, conferencing, weddings, and events operations.

- A hands-on leadership style, capable of leading service from the floor.
- Exceptional guest engagement and relationship-building skills.
