About the Role

We are seeking an experienced Food & Beverage Manager – Signature Dining to oversee the operations of our flagship venues, Altitude Restaurant and Blu Bar on 36. Located on Level 36, these iconic establishments offer unparalleled views of the Sydney Opera House and Harbour Bridge, setting the standard for luxury dining.

Reporting to the Director of Food and Beverage, this role involves driving operational excellence, motivating high-performing teams, and delivering exceptional guest experiences while optimising commercial results.

Key Responsibilities

• Manage the daily operations of Altitude Restaurant and Blu Bar on 36, ensuring superior service at all guest touchpoints.
• Oversee financial performance, including budgets, forecasting, cost control, and revenue enhancement.
• Recruit, coach, and develop a high-performing team, fostering a culture of excellence and accountability.
• Initiate innovative dining concepts, promotions, and guest experiences to elevate our luxury offering.
• Uphold the highest standards of food safety, quality, and regulatory compliance.
• Cultivate strong supplier relationships and manage purchasing, inventory, and stock control.
• Monitor guest feedback and implement ongoing improvements.
• Collaborate with hotel leadership to achieve strategic business objectives and increase profitability.

Required Experience

• Proven leadership experience in luxury food and beverage operations.
• Strong commercial acumen, with experience in budget and P&L management.
• A demonstrated passion for delivering exceptional guest experiences.
• Outstanding leadership, coaching, and communication capabilities.
• A hands-on approach, with the ability to perform effectively in a fast-paced, premium hospitality setting.
