Glenny Kebabs currently operates seven stores across Melbourne and plans to launch four new locations within the next twelve months, alongside franchising initiatives. Our ambition is to expand throughout Melbourne and eventually nationwide. The successful candidate will have a demonstrated history as an Operations Manager or General Manager, seeking to achieve a balance between excellent product, strong values, and business advancement. You must possess strong commercial acumen, operate as a sound business professional, and be willing to assist the team with hands-on tasks when necessary, embodying the principle that great leaders do not expect their teams to perform tasks they would not undertake themselves.
This role operates five days a week, with weekend coverage required based on business needs. The schedule involves late starts and finishes, allowing for a more relaxed morning. This position is not suited for individuals who strictly adhere to a rigid schedule and prefer a predictable five-day work week; the hospitality environment demands significant flexibility and an appetite for constant activity. The ideal candidate is seeking a new challenge to lead the expansion of new site openings across Melbourne. You must be capable of integrating into a business, conducting your own analysis, and proactively planning and implementing positive changes. This role is designed for individuals who have managed the operations of multiple sites independently and will be responsible for leading the head office team.
Responsibilities:
- Oversee the entirety of our high-performing sites and their operations, with the capacity to manage additional sites in Melbourne in the near future. Key areas include:
- People: Develop, support, train, and coach external and internal talent, aiming to increase staff tenure and reduce turnover, with a focus on productivity and labour costs.
- HR: Conduct interviews for senior roles, develop training documentation, and manage performance.
- Brand: Maintain the highest standards for product quality and business growth.
- Team: Provide support to assistant venue managers, venue managers, area managers, and the head office team.
- Experience: Protect customers, reduce wait times, enhance customer satisfaction, improve ambiance, and maintain store cleanliness and presence.
- Sales: Implement marketing initiatives, increase spend per transaction, and drive turnover increases per site.
- KPIs: Conduct monthly Profit & Loss reviews, budgeting and forecasting, and manage yearly budgets.
- Supply Chain: Manage Cost of Goods Sold (COGS), waste, stock controls, and yields.
- Rostering: Utilise the Tanda system for labour controls and budget adherence, maximising efficiencies.
- Safety: Ensure food safety compliance, manage council inspections, and address risks and hazards.
- Other: Conduct one-on-one meetings and business reviews with managers, facilitate weekly Operations Meetings, work in sites as needed, and execute new site openings seamlessly.
- Undertake hands-on training to gain a comprehensive understanding of the business and its tasks. We believe leaders must be able to perform any role within the team.
- Drive growth in the number of locations and achieve strong financial growth through increased revenue and the attainment of financial KPIs.
Requirements:
- Franchising experience.
- Experience in opening new locations.
- Minimum of three years of experience in the same or a similar role.
- Previous multi-site experience is essential.
- A strong connection with teams and individuals to foster a robust culture and enhance tenure.
- Proactive leadership and a high level of initiative.
- Ability to meet budgets and set KPIs, and to engage the team in this process.
- Provide ongoing feedback to your team and conduct difficult conversations when necessary.
- Outstanding time management and organisational skills.
- Ability to multitask, work autonomously, and operate efficiently to meet deadlines.
- A passionate hospitality background is mandatory.
