Restaurant Manager – The Dining Room, Lancemore Lindenderry Red Hill

Location: Red Hill Work Type: Full-time On-site/Remote: On-site

Lancemore Hotel Group is seeking a Restaurant Manager to lead The Dining Room at Lancemore Lindenderry Red Hill. Situated in the Mornington Peninsula wine country, The Dining Room provides a refined yet relaxed regional dining experience, focusing on local produce, award-winning wines, and warm hospitality. This is a full-time, on-site position.

About the Role

The Restaurant Manager will be responsible for delivering exceptional service, fostering a welcoming atmosphere, and collaborating with the kitchen and hotel teams to enhance the overall guest experience. This is a hands-on leadership role suited for individuals who excel in a premium dining setting where professionalism and genuine care are paramount.

Key Responsibilities

  • Oversee the daily operations of The Dining Room, ensuring service is seamless and elevated.
  • Greet and engage guests with warmth, professionalism, and authentic hospitality.
  • Manage, train, and motivate the front-of-house team to consistently deliver high-quality service.
  • Liaise with the Head Chef and kitchen team regarding service timing, menu knowledge, and seasonal menu changes.
  • Promote a strong wine service culture, including offering pairing recommendations and highlighting the local wine program.
  • Maintain high standards of cleanliness, presentation, and service etiquette.
  • Manage reservations and guest communications to ensure a smooth dining experience.
  • Monitor performance, customer feedback, and team culture, implementing improvements as necessary.
  • Ensure compliance with liquor licensing, RSA, and food safety standards.

About You

  • Experience in a similar leadership role within a fine dining or high-end regional venue, or an exceptional senior host/maître d’ ready to advance.
  • Strong working knowledge of premium Australian wines, with particular familiarity with Mornington Peninsula wines.
  • A service style that is elegant, personal, and relaxed, avoiding a stuffy or scripted approach.
  • Exceptional communication and leadership skills, particularly effective in high-pressure situations.
  • Genuine enthusiasm for seasonal, local produce and a collaborative approach to food and beverage.
  • Highly organised with a keen eye for detail and guest experience.
  • RSA certificate (essential).
