Manky Sally’s, Moo Brew’s taphouse located in Salamanca, has been operating for 24 months and is establishing itself as one of Hobart’s most unique and welcoming establishments. The vision is to further build on this reputation, demonstrating that craft beer bars and restaurants can also be a comfortable and appealing space, serving world-class food alongside Moo Brew beers.
The Venue Manager will be responsible for all venue operations. This includes working with the Head Chef on menu development, managing timesheets and staffing budgets, and overseeing inventory. The role also involves recruiting, training, and managing staff. The Venue Manager is expected to contribute to fast, efficient, and friendly customer service, adhere to all venue policies and procedures, and lead by example. Reporting directly to the General Manager, the Venue Manager will be a key senior member of both the Salamanca venue and the wider Moo Brew team, acting as a brand ambassador in a high-traffic tourist area. Manky Sally’s operates 7 days a week during peak season (approximately November – March) and 5 days a week during quieter months (approximately April – October). The regular work week is Wednesday to Sunday, with weekends and nights expected.
The Role:
- Oversee staff's ongoing education regarding Moo Brew's products and brand narrative.
- Collaborate with the Head Chef on menu design and with bar staff on creating specialty drinks.
- Manage all bookings, events, and private functions.
- Recruit, train, and manage bar staff and supervisors, including inductions, ongoing development, and ensuring adherence to venue policies and safety protocols across all trading days.
- Manage staff rosters, timesheets, and staffing budgets, ensuring compliance with RSA and WH&S policies.
- Manage bar activations and inventory logistics, including stocktakes, wastage, spoilage, and communicating menu changes and product information to staff.
- Oversee all venue operations, including bar readiness, cleaning, pack-down, green room waste disposal, furniture set-up/removal, and arming the building.
- Manage all venue maintenance needs as they arise with appropriate contractors, and maintain adherence to liquor licensing laws.
- Ensure a seamless patron experience by collaborating with other staff and stakeholders.
- Report to Moo Brew’s General Manager on aspects such as inventory, staff performance, patron safety, security matters, and incidents, including managing emergency safety procedures.
About You:
- Experience in managing a comparable venue.
- A proactive mindset, naturally identifying gaps, improvements, and opportunities.
- Experience and comfort in all aspects of staff and team management, including confidence in delivering and receiving feedback and managing conflict.
- Ability to foster a positive working environment and a welcoming atmosphere for patrons.
- Passion for craft beer or a willingness to learn about our brewery-to-glass processes.
- Sound knowledge of beverages and cocktail creation and delivery.
- Good knowledge of food and hygiene standards and regulations.
- Efficient knowledge of stock management and relevant processes.
- Friendly and approachable, with the ability to negotiate and work with a diverse range of internal and external stakeholders.
- Knowledge of RSA procedures and licensing requirements; RSA certification is essential.
- Ability to work nights and weekends, with flexibility to adapt to seasonal trading patterns including 7-day peak periods.
