Provenance Wines, situated within the historic Barwon Paper Mill, is a premier regional Victorian hospitality destination encompassing a highly regarded restaurant, cellar door, and a thriving weddings and events business. We are seeking an experienced Venue Manager to assume complete responsibility for daily operations, driving performance across service, team, and commercial results.

About the Role You will direct all front-of-house operations for:

• Restaurant service
• Weddings and private events

Your accountability will be to consistently deliver premium service, manage labour costs, increase revenue, and cultivate a high-performing team.

Key Responsibilities

• Lead service delivery and establish the standard on the floor.
• Manage and develop the front-of-house team, including recruitment, training, and performance management.
• Create and manage rosters in accordance with labour targets.
• Ensure seamless execution of both restaurant and event operations.
• Maintain high standards for venue presentation and cleanliness.
• Oversee POS systems, cash handling, and daily operational procedures.
• Collaborate closely with Events and Kitchen teams to ensure alignment.
• Drive upsell and revenue generation opportunities across all areas.

About You

• Experienced Venue Manager or senior hospitality operator.
• Strong restaurant background, with premium/service-led venues preferred.
• Comfortable managing events and weddings at scale.
• Commercially astute, with an understanding of labour, revenue, and margins.
• A natural leader who fosters accountability and culture.
• High attention to detail and strong organisational skills.
• Ability to remain calm under pressure and thrive in a fast-paced environment.

Salary: $75,000 – $85,000 per year Work Type: Full-time Location: Onsite in Fyansford
